Dhillon is a project from Michael Dhillon of the acclaimed Bindi estate, drawing fruit from the Glenhope vineyard at the northern end of the Macedon Ranges. Sitting high on granite soils, the site enjoys a genuinely cool climate that suits Riesling's natural drive and precision.
This is a taut, energetic white with aromas of lime, lemon and green apple lifted by delicate floral notes and a hint of crushed stone. Wild yeast fermentation and a period on fine lees in old oak add subtle texture and depth without masking the bright, mineral fruit. The palate is crisp and finely balanced, finishing dry and refreshing.
A vibrant, food-friendly Riesling that drinks well now and has the structure to reward a few years in the cellar.
