The Dhillon Chardonnay is made by the Bindi team from the Glenhope vineyard, planted at around 450 metres on granite soils at the northern end of the Macedon Ranges. It is crafted much like the celebrated Bindi Chardonnays, with wild fermentation in barrel and extended time on lees to build texture and complexity.
The result is a fresh, precise white showing citrus zest, white blossom and nectarine, with a gentle nutty, mealy character adding depth. The palate is taut and chalky yet cushioned by a subtle creaminess, finishing long and harmonious.
A cool-climate Chardonnay of real finesse that will also reward a few years in the cellar.
