Château Canon lies just west of the village of Saint-Émilion, on the limestone plateau, its walled vineyard sitting directly above the old quarry galleries that run beneath the town. The property has belonged to the Wertheimer family, owners of Chanel, since 1996, and has been extensively restored and replanted since.
Around 34 hectares are planted on clay over solid limestone, dominated by Merlot with a significant share of Cabernet Franc. Fruit is picked by parcel and the wine is matured in French oak barrels, with a measured proportion of new wood chosen to frame rather than mask the fruit.
Canon is one of the most precise wines of the appellation. Red cherry, raspberry and cassis come with rose petal, fine spice and a cool, chalky minerality, carried on silky tannins and a long, taut finish. Elegant rather than imposing, it ages beautifully over two decades and more.
