Avize is one of the great Chardonnay villages of the Côte des Blancs, a grand cru where the chalk sits close enough to the surface that you can almost taste the geology. Les Frères Mignon treat it as a single statement rather than a blending component, and their grand cru wines are given a rare two years in barrel before bottling, roughly double what the premier crus receive.
The nose is powerful and slow to unfurl, with lemon oil, white peach and orchard blossom giving way to toasted hazelnut, brioche and a deep smoky minerality. The palate is concentrated and finely structured, with the chalk showing as a persistent dry grip, vivid acidity and an extra brut finish of real length.
Florent and Julien Mignon are based in Cramant and took the plunge in 2015; until then the family, which has farmed here for generations, sold all of its grapes to the large houses. The vineyards are largely planted by massale selection, around 90 per cent Chardonnay across Avize, Cramant and Cuis. Everything is fermented spontaneously, raised in barrels of 255 to 600 litres, and bottled without fining or filtration.
