From the Duero valley in the village of La Seca which is continental climate. 100 % Verdejo on sandy-clay, limestone and calcareous marl subsoil at 750 meters elevation. Vines are 25 years and certified organic.
El Espejo is a unique vineyard of about 3.6 hectares planted in 1999 by Isaac. It has a northwest 8% slope. The planting density is about 2200 plants per hectare from which we obtain around 3ookg/ha (1.3 kg per vine). El Espejo has a really singular soil. It has much less pebbles than usual and also a higher proportion of clay which translates in a much cooler soil. A layer of marl and limestone is found at only 40 cm from the surface, which gives a higher calcareous character to the wine.
The grapes were harvested by hand in 300kg crates. Once in the cellar, the clusters are whole pressed and must ferments in French and Austrian oak, 25% new. After that, malolactic fermentation and ageing for 11 months Later, the wine stays for another 7 months in stainless steel tanks. Bottled unfinned and unfiltered.
