Domaine Camille et Guillaume Boillot is a young Meursault-based estate run by Guillaume Boillot, son of Henri Boillot, and his wife Camille, who comes from a long line of Pommard vignerons. The couple work mostly with whites from the Cote de Beaune, and this bottling comes from Saint-Romain, a high, cool appellation tucked into the hills behind Meursault. The Sous le Chateau site, named for the village perched above it, sits on limestone slopes that lend energy and precision.
This is a white Burgundy made from Chardonnay, and its elevated, breezy origins show in the glass. Expect crisp citrus and green apple, white-flower aromatics and a taut, mineral line, finishing dry, clean and refreshing.
It makes an excellent aperitif and pairs happily with oysters, fresh seafood, goat's cheese or a simple roast chicken. Serve well chilled.
