Domaine Camille & Guillaume Boillot is a young Côte de Beaune estate run by Guillaume Boillot, son of Henri Boillot, and his wife Camille, who comes from a long-established Pommard winemaking family. Their range is built on the great white appellations of the area, and this Puligny-Montrachet draws on the Premier Cru Champ Gain, a site set high on the slope that is known for producing taut, racy Chardonnay.
Puligny-Montrachet is the most precise and mineral of the great white Burgundies, and Champ Gain captures that style with vivid citrus and white orchard fruit, floral lift and a fine, chalky line of acidity. The palate is energetic and finely chiselled, with subtle texture and a long, stony finish.
Serve lightly chilled with scallops, lobster, poultry in cream or richer fish dishes. It already shows beautifully and will also reward a few years in the cellar.
