Domaine Camille et Guillaume Boillot is a family venture begun in 2021 by Guillaume Boillot, son of Henri Boillot, alongside his wife Camille, whose family roots run deep in Pommard. Working from a cellar in Meursault, the couple craft a portfolio focused largely on the great white wines of the Cote de Beaune, and Corton-Charlemagne sits at the very top of that hierarchy as one of Burgundy's most prestigious white Grand Crus.
Grown on the famous hill of Corton, this Chardonnay combines power and precision. Look for ripe citrus, white peach and orchard fruit threaded with hazelnut, white flowers and a distinct mineral, almost flinty backbone. The palate is broad and richly textured yet held together by vibrant acidity and a long, stony finish, the kind of wine that rewards patient cellaring as it gains complexity over time.
Best served in a generous glass and not too cold so its depth can show. It pairs handsomely with lobster, scallops, poultry in cream sauces, or rich, aged hard cheeses.
