Domaine Camille et Guillaume Boillot is a family estate in Burgundy's Cote de Beaune, established in 2021 by Guillaume Boillot and his wife Camille. Guillaume spent years overseeing red wine production at his father Henri Boillot's estate, while Camille comes from the Violot-Guillemard family of Pommard. Together they farm with respect for the vine and biodiversity, ageing the wines in oak while keeping any influence of wood gentle and unobtrusive.
This Chassagne-Montrachet Premier Cru Morgeot comes from one of the appellation's largest and most distinguished 1er Cru sites, where clay and limestone soils give wines of richness and harmony. Made from Chardonnay, it is generous and textured yet finely balanced, layering ripe stone fruit and citrus with a mineral backbone and a long, refined finish.
Serve chilled but not ice cold to show its depth. It is a fine match for lobster, scallops, roast poultry in cream sauces and richer fish dishes.
