Domaine Camille et Guillaume Boillot is a young family estate in the Cote de Beaune, founded in 2021 by Guillaume Boillot and his wife Camille. Guillaume honed his craft overseeing red wine production at his father Henri Boillot's estate, and for the reds the couple favour whole-cluster vinification for gentle extraction and precise aromatics, with oak used sparingly so the fruit stays to the fore.
This wine comes from Les Fosses, a lieu-dit in Auxey-Duresses, a village tucked into the higher slopes west of the main Cote de Beaune known for fresh, finely drawn reds. Made from Pinot Noir, it offers aromas of cherry, raspberry and redcurrant lifted by a floral, violet-like note, with a supple palate and the bright, energetic freshness typical of the appellation.
Serve lightly chilled to cool room temperature with charcuterie, roast pork, poultry or mushroom dishes.
