Callington Mill Distillery operates within the restored heritage precinct surrounding the historic Callington Mill windmill in Oatlands, Tasmania. Its single malts mature in the cool climate of the Tasmanian Midlands, where the highland air helps build depth and complexity over time.
The nose offers banoffee pie, Chinese five spice, dark rum, raisin chocolate and sweet almond, with hints of dried cherry, blackcurrant and sweet oak. The palate opens with earthy, gamey notes before moving into dark cacao, coffee and cigar box, with oak, dark fruit and spiced tea cake carrying through. The finish is long and smooth, lingering on banana, blackberry, spice and toasted oak.
