Ray Daniel's Tasting Notes
"In January 2024, we had the privilege of touring the legendary Heaven Hill Distillery in Kentucky. What was meant to be a standard walkthrough turned into an eye-opening experience as we explored the entire operation, witnessing the precision and scale of the distillery behind some of the finest spirits out there. Our visit took an unexpected and exciting turn when we entered the rickhouse. Although a barrel selection wasn’t initially on the agenda, the enthusiasm of the Heaven Hill crew—welcoming Aussies into the rickhouse for the very first time—set the stage for something special. With 15 barrels laid out for a barrel select program, the stars aligned, and we dove straight in.
Armed with a spirit thief, we dipped into each barrel, searching for that one standout. And we found it. Bottled at a robust 124.2 proof (an ABV of 62.1%), this single barrel of Elijah Craig is a powerhouse of flavour. From the moment it hits the glass, its deep amber colour hints at the richness inside. The nose bursts with luscious caramel, toasted oak, and the fresh fruitiness of crisp apples and bright oranges. On the palate, it’s a symphony of velvety vanilla, rich caramel, and buttery butterscotch, all backed by a warming spice mix of black pepper and cinnamon. The finish is long and layered, with every note lingering as it slowly fades, leaving you craving the next sip.
Bottled on March 28, 2024, this beauty was laid to rest for over 10 years, having been barrelled on September 3, 2013 in Rickhouse S. Barrel number 6589696 is uncut and straight from the source yielding slightly over 100 bottles —pure, bold, and available exclusively through Barrel & Batch."
