The 2011 edition of this wine comprises 57% Marsanne and 43% Roussanne picked on 24th March
and 5th April respectively. The Marsanne ripened before the Roussanne, so they were picked and
fermented separately. The grapes underwent our usual strict sorting process, which ensures all leaves
and damaged fruit were removed before crushing and pressing in the old labour-intensive basket press.
Fermentation started in tank, then was finished in oak barrels and matured for nine months. Some lees
stirring was used in the Marsanne over the winter. The intention is to keep the oak impact in
Marsanne/Roussanne very subtle, so we use no new barrels for this wine. There is no malolactic
fermentation.
