Vincent Girardin's Bourgogne Aligoté comes from remarkably old vines, averaging around 80 years of age, planted in the commune of Meursault within the regional appellation area of the Côte de Beaune. The vines grow on clay-limestone soils and are trained in the Guyot style, with careful green work through the season.
The grapes are picked by hand with sorting in the vineyard, lightly trodden and pressed, then fermented in 500 litre French oak barrels with no new oak, using indigenous yeasts and bacteria. After around six months on fine lees without stirring, the wine is moved to tank for a few months before a light fining and filtration, keeping the focus on freshness rather than wood.
Lemony aromas lead into a fresh palate with good tension and a fruity, elegant finish. It makes a lively aperitif with a charcuterie and cheese board, and works equally well with shellfish, fish, frog legs or a classic jambon persillé.
The house traces back to 1980, when a 19 year old Vincent Girardin took on two hectares of family vines. Since the early 2000s winemaker Eric Germain has led the cellar, and the wines are now drawn from vineyards across eleven Côte de Beaune villages.
