Samuel Billaud is a leading grower and winemaker in Chablis, drawing on generations of family experience to produce crystalline, mineral Chardonnay that expresses the cool climate and Kimmeridgian limestone soils of the region. His wines are prized for their clarity, tension and sense of place.
This village Chablis, labelled Les Grands Terroirs, is blended from several parcels across the appellation to capture the classic Chablis signature. It shows pure apple and citrus fruit lifted by notes of peach and grapefruit, with a chalky, flinty character beneath. The palate is taut and linear, sharp and fresh on entry, building to a concentrated, saline finish of real energy.
A natural partner for oysters, fresh seafood and goat's cheese. Serve well chilled.
