Riposte is the Adelaide Hills label of Tim Knappstein, a winemaker with more than 60 vintages behind him, who created the brand to showcase complex, cool-climate wines from the region. The Dagger is the Riposte Pinot Noir, blended from several Adelaide Hills sites around Gumeracha, Forreston, Lobethal and Balhannah, and from a mix of clones including MV6, 777, D5V2, 114 and 115.
The fruit is picked in the cool of night and early morning, destemmed without crushing so that plenty of whole berries go into the fermenters, and gently pumped over to extract soft tannin. No oak is used; the wine rests in stainless steel before blending to keep its freshness and purity of fruit.
Expect aromas of black cherry and exotic spice, followed by supple, fresh berry fruit, bright acidity and fine-grained tannins. It is a youthful, juicy and fruit-forward Pinot.
