Mezcal de Pechuga, which in Spanish translates to 'breast', is a unique variety of Mezcal that involves re-distilling a finished Mezcal with local fruits, grains, nuts, and a raw protein such as chicken suspended over the still to cook in the vapors. This type of Mezcal is traditionally made for special occasions and consumed locally, with each distillery having its own distinct version.
In the case of QQRQ, they have taken a different approach by substituting the traditional poultry with a homemade mole paste. The Méndez family has meticulously prepared this paste using a traditional recipe, incorporating guajillo and ancho chillies, sesame seeds, almonds, peanuts, garlic, onion, raisins, bananas, and cacao. Carlos Méndez, at his palenque in Santiago Matatlán, has skillfully crafted this Pechuga using the QQRQ Espadín agave as the base. After the second distillation, the mole paste is added, and the spirit is left to infuse for two weeks before undergoing a final, third distillation.
This remarkable recipe, suitable for vegetarians, is believed to be the first of its kind to be commercially released.
