Quiquiriqui Destilado Con Cacao 700ml
The special Mezcal de pechuga by Quiquiriqui features the incorporation of home roasted cacao beans. Pechuga is a process where a finished mezcal is distilled again with local fruits, nuts, and grains, and a raw protein (traditionally chicken breast) is suspended above the distillate. The resulting vapors cook the protein and are influenced by it. For this particular release, Quiquiriqui decided to substitute the raw chicken with home roasted cacao beans.
The creation of this mezcal was carried out by Carlos Mendez at his Palenque in Santiago Matalan. Carlos utilized Quiquiriqui Espadin agave as the foundation for this release, which was pit roasted, crushed, and fermented in wooden vats. After the second distillation in alembic stills, the cacao beans are added to the spirit, which is then left to rest for a period of two weeks. Finally, a third distillation takes place.
