Planteray Stiggins' Fancy Pineapple Rum is a pineapple-infused rum created by Alexandre Gabriel of Maison Ferrand for the house now known as Planteray (formerly Plantation). It revives a style of pineapple rum popular in the 1800s and takes its name as a nod to the Reverend Stiggins, a Charles Dickens character whose drink of choice was pineapple rum.
The rum is built on a Caribbean base using a two-part infusion of Victoria pineapple. The rinds are steeped in white rum and then pot-distilled, while the fruit itself is separately infused in dark rum over several months. The two are blended together and rested in cask, using only real fruit rather than added flavourings.
The result is a rich and complex pineapple bouquet carried by smoky and clove-like notes, with a genuine, layered tropical-fruit character. It is wonderful sipped neat and equally at home as the heart of a tiki-style cocktail.
