Pileus Ouzo is a traditional Greek anise-flavoured aperitif. Ouzo is a protected product that may only be made in Greece, where neutral spirit is flavoured with aniseed and often supporting botanicals such as fennel and star anise to create its distinctive character.
Its hallmark is the louche, or ouzo effect. Served clear, the spirit turns a milky, cloudy white the moment chilled water or ice is added, as the anise oils emulsify out of solution. The flavour is led by aniseed and liquorice, with herbal and gently sweet tones and a smooth finish typical of the style.
Best served well chilled, neat over ice or diluted with cold water to draw out the cloud. In the Greek tradition it is enjoyed slowly alongside mezze, cold appetisers and grilled dishes.
