Maison des Hates is the small merchant label Pierrick Laroche launched in 2016 alongside his own estate wines, buying must from friends who farm mostly on the left bank of the Serein. It gave him access to sites he does not own, among them the premier crus of Beauroy, Beauregard and Vau de Vey and the grand cru of Bougros.
Beauroy lies opposite the celebrated Fourchaume and has a more varied set of expositions across its slopes. The parcel behind this wine sits in the favoured lieu-dit of Cote de Savant, which enjoys a cooler south east aspect, and that coolness gives the wine a taut, high toned quality. Expect lemon, white peach and pear over a firm flint and crushed shell core, with a dry, chalky, saline finish.
Laroche runs a family estate at Maligny in the north west corner of Chablis, established by his father in the 1970s. He took an oenology degree at Beaune, travelled and worked harvests around the world, then produced his first wine at home in 2010. The name hates refers to an old agricultural unit of measure, roughly equivalent to the English rod. Serve chilled with oysters, scallops, grilled fish or roast chicken.
