Le Châtaignier is Pierre Girardin's Jura project in its purest form: Savagnin from a single site at Vincelles, on Bathonian limestone and grey marl, planted to an old massale selection. The wine is fermented and aged in the same 456 litre barrels he uses in Meursault, then bottled without fining or filtration. It carries a Vin de France label, which says nothing about the quality and everything about a Burgundian working outside his own region.
Savagnin handled this way is a revelation: green apple, lemon peel and bruised pear on the nose, with a curl of hazelnut and something faintly waxy behind. The palate is taut and saline, with a lower pH than Chardonnay gives and a vivid, mouth-watering line of acidity, finishing dry, stony and unusually long.
Pierre-Vincent Girardin is the thirteenth generation of his family to make wine in Burgundy and the son of Vincent Girardin. He established his own estate at Meursault in 2016, and his move into the Jura reflects a genuine curiosity about limestone in other hands rather than any desire to diversify commercially.
