Penfolds Bin 407 is a benchmark Australian Cabernet Sauvignon, first released with the 1990 vintage and inspired by the flagship Bin 707. It showcases the strengths of Penfolds' multi-regional approach, drawing fruit from premium cabernet districts across South Australia such as Coonawarra, Wrattonbully, McLaren Vale and the Barossa Valley, with the exact blend shifting each year.
The wine offers varietal definition and approachability while retaining the structure and depth Penfolds is known for. It is matured in a considered mix of French and American oak, some of it seasoned by previous vintages of Bin 707, which frames the fruit without dominating it.
Expect a core of ripe blackcurrant and dark cherry lifted by cedar, graphite and a savoury, spicy edge. The palate is generous and fleshy, with a fine graphite thread and firm yet seamlessly woven tannins that give the wine both immediate appeal and genuine cellaring potential.
