Casa Pedro Domecq is one of the founding names of Jerez sherry, with a history in the region stretching back to the eighteenth century. The bodega's Fino is the classic dry style of sherry: a pale, bone-dry wine fortified gently and aged under the protective layer of flor yeast that grows naturally on the surface of the wine in the barrel.
The flor consumes oxygen and the last traces of sugar during ageing, lending the wine its distinctive savoury, slightly saline character and protecting it from oxidation. Pedro Domecq's Fino is matured in the traditional solera system, with younger and older wines blended progressively across rows of seasoned American oak butts, producing a consistent house style across release.
The wine pours pale straw with a clean, fresh nose of green apple, raw almond, nutty bread crust and a touch of sea breeze. The palate is dry, light bodied and crisp, with savoury notes of nuts, dried flowers and fleur de sel running through a long, mineral finish. Serve well chilled in a small wine glass, and pair with green olives, jamón, almonds, anchovies, or virtually any of the small plates of Andalusia.
