This Rhum undergoes a maturation period of 14 months in a 190-litre used American Oak barrel, followed by a finishing phase in a 225-litre heavily charred cask. The sugar cane utilized in this Rhum is sourced from Neisson's own forty-hectare farm in La Carbet, renowned for its mineral-rich soils derived from proximity to Mount Pelee, as well as its high sunlight exposure, and favorable fluctuations in rainfall and temperature. The fresh sugar cane juice undergoes a notably lengthy fermentation period of 72 hours, one of the longest in the French Indies, employing natural yeasts, and is bottled at a robust 52.8%.
Nose: Exhibits toasty oak and coconut, with soft grassiness and sugar cane.
Palate: Presents a pronounced oak character and spice, complemented by hints of peppermint, citrus, and cane juice.
Finish: Features lingering oak tannins and spice, with soft oak char interwoven with gentle maritime and herbaceous notes.
