Manly Spirits Co. has been distilling on Sydney's Northern Beaches since 2017, founded by David Whittaker and Vanessa Wilton and known for a savoury streak that runs through much of its vodka range, drawn from coastal and native Australian botanicals.
Olive Vodka follows that thinking to its logical end. Rather than the citrus and berry flavours that dominate the flavoured vodka shelf, this one is built around the briny, faintly bitter, vegetal character of olive, giving a dry and savoury spirit instead of a sweet one.
There is really only one place it wants to be, and that is a dirty martini, where it does the work of both the vodka and the olive brine. It also lends a savoury edge to a bloody mary or a martini style highball.
