Manly Spirits Co. is the first artisan distillery on Sydney's Northern Beaches, opened in 2017 by David Whittaker and Vanessa Wilton and based in Brookvale. Its range runs across gin, vodka, whisky and liqueurs, with a long-standing interest in Australian native and foraged botanicals.
Elderflower is one of the great bar cabinet florals, and this liqueur leans on its light, honeyed, faintly musky perfume rather than heavy sweetness. Expect a delicate floral lift with a clean, gently sweet finish.
It works in almost anything that wants brightening: a French 75 variation, a gin and elderflower spritz, a highball with soda, or simply topped with sparkling wine.
