Saint Pierre is the village Chablis of Le Domaine d'Henri, and in a range built almost entirely around premier cru parcels it serves as the clearest statement of house style. Chablis sits well north of the rest of Burgundy on a bed of Kimmeridgian marl thick with fossilised oyster shells, and that soil is the source of the appellation's famous salinity.
Lemon, green apple and white flowers lead the nose, with a clean flinty note underneath. The palate is bright and tautly built, unencumbered by oak, with a chalky texture, crisp orchard fruit and a dry, mouth-watering finish that makes it a natural with oysters and shellfish.
Michel Laroche spent decades building Domaine Laroche into one of the largest names in Chablis before selling it in 2010, keeping only the vineyards he had inherited from his father. He named the new venture for him and made his first wine in 2012, working on a far smaller scale than before.
