Lark Distillery Mizunara Oak Cask Batch 3 is a rare and highly collectable Tasmanian single malt from one of Australia's most influential whisky makers. Part of Lark's Rare Cask Series, this release was inspired by founder Bill Lark's travels through Japan and his fascination with the country's prized native oak.
The whisky is matured in bourbon barrels before being finished in Mizunara casks, the scarce Japanese white oak revered for the complexity it lends to spirit. Mizunara trees take around two hundred years to reach maturity, which makes casks made from this wood among the most sought-after in the world. Strictly limited in number, this batch is a genuine treasure for the serious collector.
The nose layers coconut and gentle sandalwood sweetness with maple-baked pears and a hint of heather honey. The palate moves through peaches and cream into soft, botanic oak and crystallised ginger, rounded out by sticky caramelised banana. The finish is long and elegant, with orange-zest panna cotta unfurling into chocolate-coated coffee bean, pastry cream and a wisp of white pepper.
