Killik Spiced Rum is an Australian spiced rum from Killik, a small handcrafted producer founded by brothers Ben and Callum Pratt in the Yarra Ranges of Victoria. The operation began life as a sour-beer brewery before converting to a dedicated rum distillery, making it one of very few rum specialists in the region, complete with a cellar door set near Sherbrooke Forest.
It is built from a blend of Killik's own Australian-made rum and selected international rums, with component spirits aged for several years before blending. The result is rum-forward rather than sweetness-driven, only lightly back-sweetened so the character of the base spirit comes through. Warming baking spices including cinnamon, vanilla, clove and star anise round out the profile.
The style is smooth, aromatic and balanced, with classic warm spice, soft vanilla sweetness and a thread of aromatic anise. There is enough depth to sip neat or over ice, and enough character to anchor a spiced rum cocktail.
