There are very few people who have grown up with a working whisky still just outside their bedroom door.
But when your father is universally known as The Godfather of Australian Whisky and your mother is an accomplished distiller in her own right it’s just kind of normal.
Kristy Booth-Lark is the daughter of whisky royalty. In fact, if it weren’t for her parents Bill and Lyn rewriting the law and starting the first legal Tasmanian distillery in more than 150 years there might not be a local whisky industry to speak of.
Kristy started working in the family business as a teenager and has clocked two decades in the industry.
The Lark business was sold to investors in 2013 and a few years later Kristy took all she had learned and started her own distillery in the Coal River Valley, about 30 minutes from Hobart. She named it Killara after the street she lived on with her parents and that small still all those years ago.
Kristy makes phenomenal whisky.
We first met her on a tour of Tasmanian distilleries with a busload of whisky folk. With a dozen distilleries on the itinerary over two days even crazy whisky fans need to carefully manage the budget. At Killara, budget quickly took a back seat, everyone bought multiple bottles. Every single person.
Cask KD41 spent 4 years in an ex-tawny cask and has been bottled at natural cask strength. It hits all the notes you expect from a tawny cask with a sweet and nutty nose. The palate opens up with fruits including figs and dates followed by a delicious creamy vanilla custard note that coats the mouth and continues into a rich finish.
