This single malt from Kangaroo Island Spirits is distilled on Kangaroo Island, South Australia, using island-grown barley and local rainwater. Milling, mashing, fermentation, distillation and maturation all take place on site using traditional methods, forming part of the distillery's debut single malt release.
Kangaroo Island Spirits is a family-founded boutique distillery established in 2006 by Jon and Sarah Lark, widely recognised as Australia's first dedicated gin distillery and now expanding into single malt whisky. This expression is matured in Apera casks, Apera being the Australian name for sherry-style fortified wine, the local equivalent of the Spanish sherry casks long prized in whisky maturation.
That cask brings a rich, sherried character of dried fruit, with a nose of currants and stone fruit carrying a jammy depth. The palate layers currants and raisins with sweet, warm spice, leading to a smooth, balanced and long finish. Expressive yet quietly confident, it is best enjoyed neat or with a drop of water.
