J. de Villebois is a small Loire Valley estate founded by Joost de Willebois, a Dutch winemaker who has built a reputation as one of the modern champions of Sauvignon Blanc in Sancerre and the wider Loire. The domaine works organically across a patchwork of vineyards in the upper and middle Loire, with this Chenin Blanc drawn from cooler chalk and tuffeau soils that the variety thrives on.
Hand-picked grapes are gently pressed and fermented in stainless steel under temperature control, with no oak influence, to preserve the bright fruit and crystalline acidity that defines fresh Loire Chenin. The wine is left on fine lees for added texture before bottling young.
Pale straw in the glass, the wine offers an aromatic nose of fresh quince, green apple, pear and white blossom, lifted by a touch of honey and chalky minerality. The palate is dry and energetic, with crunchy orchard fruit, a thread of citrus and a long, mineral-driven finish. A versatile food wine that pairs naturally with seafood, fresh cheeses and lightly spiced dishes.
