From Henschke, the Eden Valley estate that has been making wine in South Australia since 1868. Fifth-generation winemaker Stephen Henschke runs the winery alongside his viticulturist wife Prue, with their three Eden Valley vineyards and one Adelaide Hills vineyard farmed in line with biodynamic principles. Henschke's flagship single-vineyard Shiraz wines, Hill of Grace and Mount Edelstone, are among the most celebrated in Australia.
Cyril Henschke Cabernet Sauvignon is the family's flagship Cabernet, named in honour of fourth-generation winemaker Cyril Henschke who pioneered single-vineyard wines at the estate. The fruit comes from the family's Eden Valley Cabernet plantings, producing a refined, classically structured wine with blackcurrant, cassis, cedar, mint and graphite over a fine-grained, elegantly tannic palate built for extended ageing.
Fruit is hand-picked from low-yielding vines and fermented in traditional open-top fermenters before being matured in a mix of French and American oak hogsheads. Bottle ageing in the Henschke cellar follows before release.
