Named for the seventh century Celtic princess who fled an unwanted marriage and found sanctuary in a remote Welsh valley, where she became the patron saint of hares, the Hare's Chase St Melangell Cabernet Sauvignon honours a tradition of refuge and quiet strength. The wine is crafted at the estate's hilltop winery in Marananga, in the heart of the Barossa Valley, by winemaker Matt Reynolds.
Pouring a deep, dark ruby in the glass, the nose offers cassis, blackberry and dark cherry, lifted by menthol, chocolate mint and violet, with savoury, earthy undertones. The palate is built around a core of bold black and blue fruits, with juicy freshness and a fine, soft tannin structure that flows evenly across the palate and finishes long and persistent.
A natural companion to gourmet burgers, grilled meats and firm cheeses, this is a Cabernet that captures both the varietal character of the grape and the ancient Barossan landscape it grows in.
