First Creek Wines is a family-owned winery in Pokolbin, in the heart of the Hunter Valley. Founded by Greg and Jenny Silkman in 1998, it is today run by the Silkman family with Liz Silkman as winemaker, and the team places great emphasis on careful fruit selection and attention to detail. Semillon, the Hunter's signature white variety, is central to the range.
The Classic Hunter Valley Semillon is made in the region's traditional bright, crisp style. It opens with fresh lemon and lime aromas lifted by ethereal citrus and floral tones. The palate is long and citrusy with good balance and flow, carried by a vein of lemon juice-like acidity through to a refreshing finish of grapefruit.
Hunter Semillon is vibrant and zesty in its youth and develops richer, more complex character with careful cellaring. First Creek recommends serving it at 7 to 10°C alongside freshly shucked oysters or fresh white fish with lemon and herbs.
