Les Clos is the greatest of the seven Chablis grand crus, occupying the heights of the Cote des Grands Crus at the southern end of the run with a due south exposure. Domaine William Fevre hold just over four hectares of it, a significant share of the climat and the centrepiece of the most extensive grand cru portfolio in Chablis.
Everything about the cellar work is designed to stay out of the way. Fruit moves by gravity without pumping, pressing is long and gentle, and fermentation takes place in stainless steel. Ageing runs twenty months in total, with around forty per cent spending five to six months in French oak on fine lees before the full blend finishes in small stainless tanks. New oak is kept out altogether; the barrels average six years of age, so wood supports the frame without ever writing over the site.
The result is Chablis at its most imposing: lemon and white peach giving way to white flowers, hazelnut and a deep, insistent struck flint and crushed shell minerality, with a palate that is dense yet razor sharp and a finish that seems to go on indefinitely. The estate was founded in 1959 and now farms seventy hectares in Chablis, with Didier Seguier as cellar director since 1998. Cellar it for a decade if you can, and serve it with lobster, turbot or a mature hard cheese.
