Les Grands Terroirs is Samuel Billaud's village Chablis, assembled from a selection of the domaine's parcels rather than from a single site. The name is a nod to what goes into it, and in practice it delivers a good deal more than the village designation on the label suggests.
Chablis is built on Kimmeridgian marl, a fossil rich limestone laid down under a warm shallow sea, and that origin is unmistakable in the glass. Lemon and green apple lead, with white flowers, a hint of white peach and the appellation's characteristic oyster shell and flint note underneath. The palate is dry, precise and finely textured, closing on a long chalky, saline finish.
Billaud struck out on his own in 2009 after leaving Domaine Billaud-Simon, bought back four hectares of family vineyard, and from 2015 has worked from a gravity fed cellar. His wines have become some of the most sought after in Chablis. Serve well chilled with oysters, shellfish, grilled fish or a fresh goat's cheese.
