Domaine Rolet's Château-Chalon Vin Jaune comes from a small, steep parcel on the Puits Saint-Pierre slope, one of the most highly regarded sites in the tiny Château-Chalon appellation. The plot faces due south and is planted on very calcareous soil with grey marl beneath, and like every Château-Chalon it is made entirely from Savagnin.
Château-Chalon is reserved exclusively for vin jaune, the Jura's famous 'yellow wine'. After fermentation the Savagnin is left in barrel without topping up for more than six years, during which a veil of yeast forms on the surface and slowly shapes the wine. The result is a dry, intensely savoury white with the hallmark vin jaune character of walnut, almond and spice, lifted by firm acidity and a long, saline finish.
Domaine Rolet was founded in Arbois in 1942 by Désiré Rolet and has grown into one of the Jura's larger family-run estates, with around 65 hectares of vines spread across Arbois, Côtes du Jura, L'Etoile and Château-Chalon. The estate's wines aged under the veil are regarded as its finest, and this parcel is the rarest expression of that tradition in the Rolet range.
