A Premier Cru red Burgundy from Domaine Pavelot (Jean-Marc & Hugues), a family estate based in Savigny-lès-Beaune. The Pavelots have been cultivating vines here since the French Revolution, with Jean-Marc putting the domaine firmly on the international map from the 1980s and his son Hugues joining the family estate in 1997. The domaine covers around 12–13 hectares, with a strong focus on Savigny.
100% Pinot Noir from the Aux Gravains Premier Cru, a plot with a mix of sediments including gravel, at the foot of the Guettes slope. Around two-thirds of the vines are 80 years old. Expect an elegant, purity-driven Savigny with pure red and black cherry, subtle spice, cocoa, gamebird and a serious base of stone, leading into a deep, transparent palate with a long, vibrant, precisely defined finish.
Farmed using 'lutte raisonnée' principles. Grapes are destalked without crushing, given a cool 2–3 day maceration and fermented in wooden tanks for the 1er crus, with punch-downs early and pump-overs towards the end. Aged with around 25% new oak.
