Mounir and Rotem Saouma established their two-person micro-negoce in 1999 that focuses almost exclusively on the very best 1ers and grand crus in both red and white. With respect to the 2021 vintage, Mounir told me that "there is a purity and transparency to the wines that we haven't seen in a long time. I absolutely love this vintage and the idea that the wines aren't sufficiently ripe is absolutely absurd. The average potential alcohol of my wines is 13.5% and there's no way that you get that level naturally with underripe fruit. Moreover, if there were underripe tannins or too much acidity, there is no place for them to hide in wines this pure. I also don't believe that this is a vintage destined to be drunk young, at least not because of a lack of staying power or development potential. That many 2021s will be drunk young is no fault of the wines as they have everything they need for a very long life. I would add that they are developing so slowly in barrel that I'm in no rush to bottle them, in fact I suspect that nothing will be bottled before 24 months of elevage have passed." Saouma noted that from the moment he put tthe wines in the cellar that they had not been touched in any way including no sulfur additions. I have to agree with Saouma that he has made some first-rate 2021s and many of them are indeed recommended.
