Domaine Huet is one of the great names of the Loire. Gaston Huet founded it in 1928 with the purchase of Le Haut-Lieu itself, and the estate went on to become one of the first in France to convert to biodynamics, farming that way from 1990 and certified since 1993.
Le Haut-Lieu is the original vineyard, roughly nine hectares of deep clay over limestone, and it gives the roundest and most approachable of Huet's three sites. Hand harvested Chenin Blanc is fermented with native yeasts and raised in a mix of tank and large, older foudres. In its dry form the wine is crystalline and precise, with quince, orchard fruit and citrus over a chalky, savoury core, a honeyed depth building underneath and a long, dry finish.
It drinks beautifully young with pork, roast chicken, richer fish dishes or hard cheeses, and it will also reward long cellaring, which is what Chenin from this address is famous for.
