The Haute Densité is one of Olivier Lamy's most distinctive bottlings, drawn from a section of the Derrière Chez Edouard vineyard in Saint-Aubin planted at exceptionally high vine density. Where most Burgundy vineyards sit at around 10,000 vines per hectare, this parcel rises to roughly 30,000 vines, a return to pre-phylloxera planting that drives intense competition between vines and yields wines of remarkable concentration and tension.
Domaine Hubert Lamy has worked these sites for generations, and under Olivier the estate has become one of the most sought-after addresses in the Côte de Beaune for white Burgundy. Yields are kept low, oak handling is restrained, and the wines are bottled with a focus on transparency to site rather than winemaking signature.
Chiselled and pure, the wine opens with citrus zest, white flowers, pear, hazelnut and wet stones, with a fine reductive lift that builds as it aerates. The palate is satin-textured and layered, carried by a racy seam of acidity through a long, mineral-driven finish.
