Les Rouvrettes is one of the premier cru climats of Savigny-lès-Beaune, sitting on the slopes above the village where thin, stony soils over limestone push Pinot Noir toward perfume and precision rather than weight.
Domaine Guilbert-Gillet was founded in 2020 by Benjamin Guilbert and René Gillet. Benjamin came to wine without a family estate, studying in Mâcon and Montpellier and working at Château Smith Haut Lafitte, Domaine de Montille, Domaine Guigal and Clos des Lambrays, and he names Jacky Truchot as his greatest influence. Farming across his 3.6 hectares is organic and done by hand. Three selections are made at harvest, the fruit is fully destemmed and given a long, gentle maceration, then pressed slowly and aged at least eighteen months in barrel without racking before gravity bottling.
This is a premier cru of finesse. Red cherry, raspberry and pomegranate are lifted by violets, dried herbs and a distinct stony note, with silky, well judged tannins and a long, mineral finish. It is approachable early but has the structure to develop over five to ten years.
