Domaine Pinon is a family estate in the Vouvray appellation of the Loire, with the family's viticultural roots traceable back to 1786. Julien Pinon is the eighth generation at the helm, working alongside his father François. The domaine has been certified organic since 2007 and farms vines averaging around 40 years old on classic Vouvray tuffeau limestone and silex soils.
100% Chenin Blanc from flatter, clay-forward parcels within the estate. A dry style — under the appellation's 8 g/L residual sugar threshold — showing a nose of white flowers, apple, quince and a saline, chalky minerality. The palate is precise and mouth-filling, with bright acidity and a long, pure finish reflecting the tuffeau limestone underpinning these vines.
Hand-harvested and whole-cluster pressed, then fermented spontaneously with native yeasts over two to three months. Aged for four to five months on fine lees in used oak demi-muids and foudres.
