Cuvee Laurence exists because Laurence Feraud tastes through the cellar and occasionally sets a cask of Cuvee Reservee aside for longer ageing. That cask then spends an extra two years in large old oak foudres, taking total time in wood to around forty months. It is only made in certain years, when a barrel shows it will repay the wait.
The intention is to release a wine that already tastes the way Pegau Reservee might after a decade in the cellar, and it works. The blend is the same, around eighty per cent Grenache with Syrah, Mourvedre, Counoise and a scattering of the other permitted Chateauneuf varieties. Fruit is never destemmed, whole bunches ferment in traditional cement vats, and the wine is then raised in old French oak.
The result is deep and savoury rather than fruit forward: kirsch and dried fig, garrigue herbs, leather, black olive, pepper and warm stone, with a broad, generous palate and tannins already softened by time. Serve it with slow roasted lamb, game, beef braised in red wine or a well aged cheese.
