From Domaine de la Vougeraie, the Boisset family's prestigious estate based in Premeaux-Prissey between the Côte de Nuits and the Côte de Beaune. Founded in 1999 to bring together the finest Burgundian vineyard holdings the Boisset group had acquired since 1964, the domaine today farms around 44 hectares spread across more than 30 appellations and is certified organic, with biodynamic principles applied throughout the vineyards.
A single-parcel village Gevrey-Chambertin from Les Evocelles, the historic 5-hectare site purchased by the Boisset family in 1964 and now farmed organically. Located on a steep east-south-east slope above the village, the vineyard sits on clayey silt over pure silt with a lightly calcareous character. Expect a powerful, energetic wine with peppery and savoury aromatics, ripe dark fruit, real depth and a long, mouthwatering finish.
50% whole-bunch fermentation by gravity, with no added yeasts or enzymes. Cold pre-fermentation maceration for 5 days at 12 to 15°C, followed by a total maceration of 24 days with two punchdowns and a daily light pump-over. Vertical pressing, then aged for 16 months in barrels with around 26% new oak.
