Domaine de Chevalier Blanc Pessac-Léognan 2019 750ml

Domaine de Chevalier sits in a clearing in the pine forest at Léognan, and has been run by the Bernard family since 1983. It is a Cru Classé de Graves for both colours, and its white is made in tiny quantities from a few hectares of vines, which has long made it one of the most sought after dry whites in Bordeaux.

Sauvignon Blanc leads the blend with Sémillon providing weight and length. The wine is fermented in barrel and raised on its lees for an unusually long period, around eighteen months, with a measured proportion of new oak that supports rather than dominates the fruit.

The result is taut and intensely mineral in youth: grapefruit and lemon zest, white flowers, fresh herbs and a flinty, smoky edge over a creamy core. It is famously slow to reveal itself, and rewards a decade or more in the cellar, where it takes on honey, nuts and beeswax while holding its acidity.
