Les Clous Aimé is the domaine's Chardonnay under the Bourgogne Côte Chalonnaise appellation, drawn from the Les Clous site on the slopes near Bouzeron. It is the wine that shows what careful organic farming can do at a modest classification level, and it routinely outperforms the label it wears.
Expect a bright nose of lemon, pear and white blossom, with a light almond note behind. The palate is crisp and cleanly built, with a fine chalky texture, good depth of fruit through the middle and a dry, persistent finish that keeps the whole thing lively.
Domaine A. et P. de Villaine sits at Bouzeron in the Côte Chalonnaise, owned by Aubert and Pamela de Villaine and managed by their nephew Pierre de Benoist. The vineyards were certified organic as far back as 1986, and the diversity of the estate's old vine plant material is one of the reasons its wines have such consistency across the range.
