Dappled is a small Yarra Valley producer led by winemaker Shaun Crinion, known for a detailed, low-intervention approach shaped by time in Burgundy. The Tradition Cabernets is a blend of Cabernet Sauvignon and Cabernet Franc from a single vineyard at Steels Creek, planted in 1981.
A portion of whole bunches goes into the ferment for lift and complexity, the wine is fermented with wild yeasts and matured in old French oak. The result is energetic and structured, with cassis and dark berry fruit, leafy Cabernet Franc perfume, fine spice and a firm, elegant tannin frame.
Well balanced and savoury, it is an ageworthy Yarra Valley red that will reward time in the cellar.
